Mediterranean Veggie Couscous

  • 2 Squash
  • 1 Red Onion Onions
  • 1 package of Mushrooms
  • 1 bundle of Asparagus
  • 2 Red Peppers
  • 1 package of Couscous
  • 2 Zucchini
  • 2 Green onions
  • 2 Plantains
  • Meditteranean cheddar cheese
  • Fontina cheese
  • Gorgonzola
  • Balsamic Vinegar
  • Olive Oil
  1. Microwave Squash on high for 2 minutes.
  2. Peel squash and chop into large chunks.
  3. Chop onions, peppers, mushrooms and asparagus.
  4. Place veggie mixture on to baking sheet.
  5. Drizzle olive oil, salt and black pepper over the veggie mixture. Roast in oven at 450 for 7-10 minutes.
  6. Slice plantains and fry in pan with butter and vegetable oil.
  7. Chop zucchini.
  8. Follow directions on the couscous package.
  9. Add veggie mixture, plaintains and zucchini to couscous.
  10. Cut up cheese and add to dish.
  11. Drizzle Balsamic and add spices to taste it.
  12. Serve and ENJOY!!!
