Easy, Indian inspired appetizer idea for Meatless Monday. I think the traditional version calls for cilantro and different spices. This is my twist. Enjoy!
- 2 hot house cucumbers
- 12 oz. of Greek Yogurt
- 3 T. of lemon juice
- Dash of turmeric or cumin
- 1 T. chopped fresh mint
- 1/2 t. of sugar
- 1/4 t. of salt
- Stir all ingredients together in a bowl.
- Serve with crackers or bread.
- Best if let to chill overnight in the refrigerator.
